Look Mom I'm on TV! Plus Melon Chicken Salad Recipe

As many of you know I write E-cookbooks for Get Real For Kids ; this website helps families bring the "REAL" back to the meal.  They focus on family favorites and kid friendly foods that are both nutritious and delicious. I hail from a town that takes pride in their melons; so much that our Melon Festival is this weekend!  In honor of the festivities please enjoy this delicious recipe.


Grilled Chicken and Cantaloupe Salad
4
boneless skinless chicken breast halves

tsp
sea salt
½
tsp
fresh ground pepper
1
jalapeno pepper
Juice of 2 limes

Tbs
olive oil
1
garlic clove minced
2
tsp
soy sauce
1
celery stalk
1
cucumber seeded and sliced into half moons
1
small cantaloupe into 1 inch cubes
½
pint
grape tomatoes halved

Tbs
basil or cilantro, chopped
6
cups
of spring mix (about 3 ounce) or chopped romaine
Citrus Chicken
Season chicken with salt and pepper
Wearing gloves remove seeds and ribs of jalapeno pepper, mince
In medium bowl stir in the juice from 1 lime, garlic, soy sauce and 1 teaspoon of jalapeno. Add chicken and marinate at room temperature turning once.
Remove chicken from marinade and grill over medium heat. About 5 minutes on each side or till juice run clear and a thermometer read 160 when inserted to the thickest part of meat. Let meat rest 5 minutes.
Cut chicken into ½ inch diagonal strips against the grain of the meat
Toss chicken with prepared salsa
Divide spring mix on 4 plates and top with chicken and salsa

Prepare Melon Salsa while chicken marinates
Cut celery on an angel making ¼ thick crescent moon slices
Toss celery and cucumber with melon, tomatoes, basil, remaining jalapeno and juice of other lime in a medium bowl. Set aside.  Serve with chicken over a bed of greens.
Yield: 4-6
